The inexpensive thermometers should contain an NTC thermistor, which isn't exactly known for its accuracy, but it's perfectly adequate here. You definitely won't notice the cable extension; at typical temperatures, the sensor should have significantly more resistance than a short piece of wire. If in doubt, measure it.
