Yes, I still slept well last night, thank you  . If someone, as a foreigner, wants to learn the German language, they should also strive to improve, otherwise they will never learn it. Sometimes you see posts where it's clear that the German language is not even understood, which hopefully isn't a problem if it's written with a proper justification and a good intention. Sometimes, people intentionally (!) misspell things (punctuation, capitalization, spelling) or use a "slang" language, and in my opinion, that doesn't do a high-quality forum any good. In this sense: I will make an effort... Aktuell:

Thanks again for the tip that these are two separate sensors. I was already wondering what all those cables were for.
That explains why the display is working properly (which was ultimately the reason I wasn't 100% sure it was the temperature sensor). With the last faulty temperature sensor, the display malfunctioned, but the car still functioned normally.
That's why I just had it fixed during another repair sometime.
With a little thought, I can say that it's definitely the right part, even without testing it.

I was at my parents' place in the countryside today (where not every workshop charges a fortune for a single error code reading).
The temperature sensor was the issue, and surprisingly, it was even listed as an intermittent error in the error memory (although initially, no one really believed me when I demonstrated the problem).
I quickly retrieved the part and, fortunately, had someone there install it for me.
Remove the metal clip (the connector will only come off properly if the sensor has already been removed), take out the old one, and put in the new one... unfortunately, it's leaking because the sealing ring wasn't seated correctly.
When I tried to remove it, it naturally disappeared into the depths of the engine compartment with the water pump, and by the time it was found, almost half of the coolant had leaked out.
The ring is so loose on the sensor that the same thing could have happened to me, and then I would have had to go buy some antifreeze.
So, the job was done in half an hour and cost me €13.50 plus half a liter of extra antifreeze. Considering the current freezing temperatures, it was worth it to me.

Gratulation! Jetzt ist der Fehler hoffentlich weg, wovon man schon ausgehen kann/darf. Trotzdem wurde ich in deinem Fall zusätzlich die Betriebstemp mit VAG-COM überprüfen, der sollte im Normalfall schon 80 grad und mehr erreichen (wenn nicht, Thermostat). Dann kann man beim Warmfahren gleich sehen, bei welche Temp die Anzeige bereits 90 grad zeigt. IcI was amazed.
The only vehicle I've owned (and still own) where the combination instrument displays the correct values (within a certain tolerance, of course) is my GIII VR6. However, it can be unsettling when the temperature gauge constantly fluctuates between 80 and 105 degrees. To reassure customers, this display was adjusted in our TDIs.
Off-Topic:
A Dutch method to check if the engine has reached its operating temperature, and it works just as reliably, but is cheaper: Place a slice of Gouda cheese on the engine block; when it melts, you have reached 90 degrees  (I'm not being serious right now!). Aktuell:

With the new sensor, the rough running of the engine has improved significantly, even when the engine is warm, and there's noticeably more power at low RPM compared to recent years. It seems the sensor was gradually failing for some time.
