You can usually find out most of the measurement values by experimenting with the measurement blocks.
For the specific vehicle/engine type, it is recommended to use the "injection and glow plug system" diagnostic tool, which can be purchased online from Volkswagen for a reasonable price.

The status of the clutch switch likely also appears here in block 6, value 2, along with the status of the two brake pedal switches.
There are two values for the accelerator pedal, as there are two potentiometers.

The values look okay. Please log the engine speed, throttle position, and voltage at the control slide again, if possible, using the "Turbo" button (if available, it will appear on the corresponding screen).
Und versuche das von Dir beschriebene Problem zu provozieren. Es nutzt nichts, sinnloses Gegurke aufzuzeichnen wo alles ok ist. Wichtig ist das, wo es nicht ok ist.

Dein Log wo Du das schon aufgezeichnet hast weiter oben, enthält leider zuviel anderes Zeug, so daß die Abtastrate unterirdisch ist. Alle 2s ein Messwert ist für den Lokus.
