Yesterday, I replaced my temperature sensor (the dual sensor at the coolant outlet) using a headlamp.

The old one was a 357 919 501 A with a yellow ring, and the new one is a 6U0 919 501 B... (part numbers follow) with a blue ring.

My experiences:
The donor is quite obstructed at the 1Z position!
It's impossible to get it done without getting it wet.
My thumb is thinner than the hole where the sensor goes in.
I currently have about half a liter of cooling water sitting in the garage.

The new sensor shows about 2-3 degrees more under the same driving conditions. But 83 degrees is still too low for me.
