Such an engine has multiple oil pressure sensors for different engine speeds.
The first gear (with low pressure, e.g., 0.6 bar) needs to be shifted even at idle speed, which seems to be working for you.
The second one (for slightly more pressure, e.g., 0.8 bar) needs to switch at a slightly higher RPM (e.g., 1500...).

That's likely where your problem lies. Your engine only reaches the 0.8 bar mentioned in the example at, for example, 1550 RPM. Therefore, the control unit detects that between 1500 and 1550 RPM, the required 0.8 bar of oil pressure is not present.
The cause could be oil that is too thick, which should be noticeable especially during cold starts. Another possibility is a blockage in the oil circulation system. Was the filter changed? (It should be, but you never know...) Were ALL the oil pressure sensors replaced, or at least the one for 1500 RPM, or was ANY oil pressure sensor replaced...? (That would be typical of a VW/Seat workshop...)

Since the problem started exactly after the last oil change, a faulty switch is less likely than improper work during the oil change or even the wrong type of oil. The PD system has relatively high requirements in that regard...
PS: The numerical values provided are only examples and should be understood as such. I'm not sure where those values apply to your specific engine.
