For your project, a W124 equipped with 4matic would be a much better starting point, but if it has to be "Karl-Heinz"...

Depending on whether all of this still needs to be approved by the TÜV (German technical inspection authority), there are different approaches.
"I read sentences like "so that I can drive through sand and mud" and "I would like to have the..."
"to modify a dark brown van into a vehicle that is more or less capable of off-road driving."
For me, "off-road capable" also means raising the vehicle's ride height!
If the undercarriage gets stuck somewhere and the wheels are heavily unloaded, even a locking differential won't help!

Limited-slip differentials are available from Drexler, Wavetrac, and others, but at that point, we can no longer talk about a "Lobaguette" project! (I think it should mean "Low-Budget"

Then I would look for tires with a more aggressive tread pattern, from various manufacturers such as... Votech or Fedima might have something on offer.

At the very least, an additional electric fan controlled by a thermostat is required. Engine oil/differential oil cooler.

I strongly suspect that the operator of this forum finances its website/homepage through the sale of diagnostic equipment and software.
I find it at least questionable when someone offers their services (whether free or not) for diagnosing problems or reading error codes specifically at that location!
Especially since VCDS doesn't seem to originate from here...
But that's just my humble, personal opinion.
