If excessive current is flowing through the wiring harness and causing damage, wouldn't it be quite strange if the software version was the cause? Can the wiring harness be compared to the expected state (Erwin, current wiring diagram)?

I have to disagree with you, because my colleague had already correctly installed the wiring harness, and it should have sparked immediately after my coding attempt. It's very possible that this newer software uses different input and output signals.
I believe the specialist will be coming on Tuesday to address the issue. Viele Grüße

The error has been found. The wiring harness was incorrectly wired internally. It was obvious from the beginning that two wires were connected to what should have been three. This was also the case with the second one that was installed for testing. Now, we need to determine how this could have happened and how many defective units are circulating.

Here's a summary of everything, compiled after I discussed the facts with my colleague:
What was the reason that the camera didn't work right away?
The two wiring harnesses originate from a known manufacturing defect in a VW production facility in Wolfsburg, located in the Czech Republic. Unfortunately, these cables were not destroyed and have, at least in part, re-entered circulation. Upon opening the wiring harnesses, it was discovered that 12V and 6A are being supplied to the video signal of the infotainment system.
2. Why wasn't the infotainment system corrupted during my coding process?
"Fortunately, my initial encoding was incomplete. It was only the online encoding from WB that enabled the processing of the video signal. In the process, two infotainment systems were damaged because the input was not designed for 12V at 6A."
3. Which cable harnesses are affected?
Obviously, this applies only to the first production run of the Golf 7. Currently, there are no retrofit kits available, as they need to be manufactured. Viele Grüße

It's not possible to say it that way. Rather, it's likely that the faulty cable is applying 12V from the internal power supply to a video contact (input or output?). As long as this contact has a high impedance, it survives. However, when it's activated by the programming, it probably becomes so low in impedance that the 12V, which is incorrectly applied instead of a video signal, causes an overload.
