I finally installed the Pierburg mass airflow sensor (part number 7.22684.08.0) in my ALH engine, and I'd like to share a brief summary of my experience:

It's indescribable...
It readily revs from 900 to 4000 RPM in gas mode, there's no more hesitation, and it also accelerates smoothly and "without bogging down" in fourth gear from 2000 RPM.
It's really not comparable to the Bosch part that Volkswagen installed.
Those 60 euros that he spent on accessories have definitely already paid for themselves after just the first ride.

So, it wasn't really broken yet.
It was clear that he didn't have much time left to live. Between years 2800 and 3100, there wasn't much happening, but things started to go reasonably well from around 3100 onwards. However, everything felt tough and slow.
I'm going to say this now, but I believe that even when it was brand new, it didn't drive as well as it does now with the Pierburg part.

So, I've already had a direct comparison between a Bosch mass airflow sensor that was 2 years old and a brand new Pierburg one (still warm from the parts store).

Conclusion: There was no noticeable difference. (Subjective driving experience, without any measured values).

So, I guess either I got a bad Pierburg unit, or yours was already completely broken.

So, if both mass airflow sensors (MAF sensors) are functioning correctly (verify this by checking logged values), then there should be no difference or at most a very slight difference noticeable.

Then the Bosch component was probably already completely worn out.
I'll reinstall it and run some tests to get a proper comparison.
