It keeps appearing even after I delete it. As far as I know, the sensor is located under the cover of the rearview mirror. Is its lifespan coming to an end?

Yes, these humidity sensors are just as prone to failure as the air quality sensors.

Can you get the ET separately, or do I have to buy the entire front assembly including the engine from VW?

I'm not sure about the Sharan; I haven't had one in my customer base. I've only replaced them in various Audi models. They're always sold individually, and they cost a significant amount, typically between €80 and €140.

If I enter the part number and the word "new" into any search engine, offers for approximately €85 can be found...

The Google cache indicates this. The offers have already expired or were for used parts.

Currently, there's nothing new available for €85. At least, I haven't found anything.

I have now ordered a new one from the online marketplace. It's coming from Spain.

What's the best way to remove the old sensor from the windshield? What adhesive can be used to reattach the new sensor?
