What is the correct temperature for the engine mentioned above? Does the mixing ratio of water and coolant affect the temperature?

I think you need to formulate your questions a little more precisely...

In my opinion, the water/antifreeze ratio doesn't affect the temperature. However, it changes the time it takes for your engine to reach operating temperature...
(please correct)

What problems are you having?

I replaced my ZKD (cylinder head gasket) and ZKopf (cylinder head), which I had to replace due to temperature problems. Now, the temperature gauge in my car always reads around 90°C (194°F) and slightly above. Before, the operating temperature was always around 80°C (176°F), a bit lower. When we refilled the coolant, we didn't mix it in a 1:1 ratio, but perhaps a ratio of 1:4 water to coolant. The temperature gauge reacts very quickly to stress, and high-revving driving and inclines immediately cause a rise in temperature. However, it never goes above ~95°C (203°F). Having had a bad experience, I'm not willing to invest any more money in that.

Diesel thermostats typically regulate the engine coolant temperature to 87 degrees Celsius.

The sensor for the display is located at the engine outlet, so a reading of 80 degrees is not entirely possible.

90 sounds pretty good.

How do you measure the temperature? The reading on the dashboard is just a rough estimate for (too cold) or (too hot) - I wouldn't pay much attention to the numbers displayed.
