Hello everyone,
I have my case back now! It just cost me 1500 euros after some haggling.
2 hydroelements were clogged, which also affected 2 lifting levers in the bucket. The oil that was just changed was pitch black and smelled like exhaust fumes and diesel.
'But he still smoked like a coal furnace, even though I had the EGR valve replaced.'
I simply unplugged the electrical connector of the EGR valve, and lo and behold, there's ALMOST NO SMOKE anymore! It only appears when accelerating with full throttle.
But I still have somewhat sluggish performance on the highway. It's fine up to 140 km/h, but then it becomes very slow. I can reach a top speed of about 215 km/h, even with the wide tires. The fuel consumption is also still a bit too high.
1. NOW: Could it be harmful to my machine in the long run if the EGR system is deactivated?
2. The pressure hoses from the turbocharger are also new, however, the turbocharger has some play on the shaft, but according to VW, it is still within the tolerance limits.
3. LMM und Turbo habe ich mittels VAG-COM überprüft. LMM ca. 850 und Turbo ca. 1950 bei Vollgas im 2. Gabbreviations
What else could be broken right now?

If you permanently disable the EGR valve, it will not affect the engine's lifespan. However, you should have the deactivation done professionally. The disconnected connector should ideally trigger an error message in the engine control unit.

With a faulty AGR (Exhaust Gas Recirculation) system, the engine takes longer to warm up. That's why I decided to repair my previously defective AGR system and also occasionally clean the intake manifold.
Furthermore, this isn't the real solution. If the problem isn't with the EGR control valve, there's likely something else wrong. This should at least be investigated, even if you ultimately disable the EGR for the usual reasons.
