We upgraded the turbocharger in my Polo 6C GTI from an IS12 to an IS38 (Golf R).
Now, let's move on to the following problem:

We need to recalibrate the boost pressure sensor because the original one only supports up to 1.5 bar, while we've installed one that supports up to 3 bar.

The error code in the fault memory is now 26363 - sensor for boost pressure G31... This is also understandable, as it's providing other incorrect values.

Can someone explain to me how to pair this device?

There's nothing that can be learned or adjusted through diagnostics.

The chip tuner must take into account the modified components in the data set from the engine control unit.
And without wanting to offend anyone: It's very unwise to install any components without consulting the specific chip tuner, especially if you think those components are great.
Normally, the chip tuner has very specific ideas about what modifications are appropriate for the engine, and they usually achieve this by using their own components to ensure a reliable and high-quality result.
