The car's onboard computer (Kombi) requires the oil level/temperature sensor because it uses that data to calculate the maintenance interval. I'm not aware of any coding that would disable this. Try to code the Kombi to use a fixed maintenance interval (search function - technical articles); perhaps then it will ignore the oil sensor.

Okay, so I have a Seat Leon TDI with 81 kW (AHF engine)! It was first registered in May 2000! I installed and adjusted everything myself! So, I was just working on the car again, and the oil sensor is now removed. Everything is working perfectly!
Only the immobilizer warning light is flashing continuously! But the car runs!

So, this speedometer is designed for long-life operation, and even if you program it for fixed intervals, it will still use its sensor because it can then simply measure the oil level.
You essentially only have the option of installing a new oil pan including the sensor (~160€ plus labor) and connecting it to the control unit with the 3 cables. You cannot turn off the message, as Gremlin already correctly stated.

If the sensor is only used to measure the oil level at a fixed interval, then either two resistors (voltage divider / potentiometer as a measurement principle) or a connection to ground or positive (switch for correct oil level) would need to be used to simulate a correct oil level.
Unfortunately, I don't know the exact way the sensor works. Perhaps Gremlin, Mersente, or Julian might have something to say about that.
I wouldn't buy a complete oil pan at the prices Julian mentioned, not even for that car.

Well, the oil pan isn't that bad.
According to statements from Gremlins, the sensor is 'self-aware' and outputs digital signals that cannot be easily faked with just a few resistors. I haven't yet encountered anyone who has successfully modified it without any drawbacks.
Perhaps the prices at Seat are a bit more reasonable; I'm assuming it's a Golf 4 with an AKL or ALH engine.
